Eating healthy without really trying is something I strive for in life. Recently, I have been swapping out traditional noodles for zucchini spirals and I absolutely love them! Not only are you getting in your veggies, but it is also a lower-carb option.
You can really use any sauce you want to cook zucchini noodles, and once cooked, they taste almost identical to traditional noodles. Seriously, you can’t even tell. I’ve been obsessed with ginger lately, so I used a very clean-ingredient ginger stir-fry sauce for this recipe.
Ingredients:
- 2-3 packs of zucchini noodles (if you have a spiralizer and aren’t lazy af, you can make them yourself)
- 3-4 tablespoons of Mr. Spice Ginger Stir Fry Sauce
- 2 packs of ground turkey
- 1 tablespoon of chili flakes (add more if you like it spicy)
- 1 teaspoon of garlic powder
- 1 teaspoon of chili powder
- Salt and pepper to taste
Directions:
- Heat 2 tablespoons of ginger sauce in a sauce pan on medium heat
- Add ground turkey
- Once the turkey is halfway cooked, add the chili flakes, chili powder and garlic powder
- Add in the salt and pepper to taste once turkey is almost fully cooked and the water in the pan has evaporated
- In a separate saucepan on medium heat, add zucchini noodles and 1 tablespoon of ginger sauce
- Allow the noodles to wilt down, then add the chili flakes, chili powder and garlic powder plus salt and pepper to taste
- Once the noodles are cooked, add in the fully cooked turkey and stir in to the noodles
- Add more sauce and spices if desired
This recipe makes 2-3 servings, use 3 packs of zucchini noodles for 3-4 servings
